Wild-strain: ‘Galloping Goose’ oyster

The ‘Galloping Gooseoyster is one of our local favourites. We originally found it growing wild in Metchosin, BC, on the Galloping Goose regional trail, and it quickly became one of our staples. This wild oyster mushroom is blonde in colour, a Pleurotus pulmonarius strain that makes it very versatile, and can be cultivated year-round on a variety of substrates.

This wild-strain oyster has a mild, anise-like flavor that becomes more robust when cooked. It absorbs the flavors of the ingredients it is cooked with, making it suitable for a wide range of dishes. The ‘Galloping Goose’ oyster has a tender and meaty texture, making it a popular choice for both vegetarians and meat-eaters. It has a delicate, velvety surface and a firm yet tender bite.

Oyster mushrooms can be prepared in various ways, including sautéing, stir-frying, grilling, roasting, and even baking. They work well in soups, stews, stir-frys, pasta dishes, and as a meat substitute in various recipes. Oyster mushrooms are low in calories and fat, high in protein, and a good source of essential nutrients such as fiber, vitamins (especially B vitamins), and minerals like potassium, iron, and zinc.

Oyster mushrooms provide a range of essential nutrients, including B-vitamins (like niacin and pantothenic acid), which are important for energy metabolism, as well as minerals like selenium, which has antioxidant properties.
